Beef and Cheese Shells
1Tbsp olive oil
1 lb ground beef (80/20 or 70/30) OR 1 lb ground chicken (all thigh or mixed ā DO NOT USE ground chicken breast)
1Tbsp butter
1 Tbsp olive oil
1 small onion chopped (4 to 8 oz)
3 to 4 cloves of minced garlic
Paprika & Italian Seasoning (one teaspoon each ā or to taste)
2.5 Tbsp flour
1 cup beef or chicken broth
16 oz tomato sauce or puree
1 cup heavy cream OR one 8 oz tub of sour cream
Salt & pepper to taste
4.0 oz Cheddar cheese shredded
1lb Cooked pasta (pasta shells or other tubular pasta)
Reserved pasta water
Directions:
Cook pasta according to package directions, drain, saving up to 1 cup of pasta water
While pasta is being prepared:
Heat oil in skillet
Brown ground beef or chicken until no longer pink and remove meat from skillet
Heat butter and olive oil in now empty skillet
SautƩ onion until soft (about 5 minutes)
Add garlic and sautƩ for 30 seconds
Add seasoning and continue to sautƩ about 2 minutes to cook the paprika
Add flour, mix in well and sautƩ for about 2 to 4 minutes to cook flour
Add slowly 1 cup Beef or Chicken broth while stirring to combine (can use Better than Bullion or a stock cube)
Add 16 oz (two 8oz cans or one 15 oz can) tomato sauce OR tomato puree
Let simmer for 10 to 15 minutes to allow the flavors develop
Add cream (heavy or sour) ā heat through but do not boil
Season to taste with salt and pepper
Add browned meat back into pan and heat through
Add cooked pasta and stir until combined
Add pasta water to smooth and emulsify the sauce as necessary
Add cheddar cheese and stir until combined

Very easy dish for under $15 and serves 4 with an easy side.
