Recipe:
Ingredients: (makes roughly, 3-4 pieces depending on how big the chicken breast was)
- 2 Chicken breast/thighs
- Buttermilk
- Brioche Buns
- Flour
- Cornstarch
- Baking powder
- Salt
- Pepper
- Paprika
- Garlic Powder
- Cayenne (optional)
- Lemon juice
- Chives
- Hot Sauce (optional)
- Greek yogurt (non fat plain greek yogurt)
- Cooking spray
- Eggs
- Pickles
Steps:
1. Marinade the chicken for at least 1 hour. 24 hours is preferred. Add buttermilk, 1-2tbsp salt, 1tbsp pepper, 1-2tbsp garlic powder, 1 tbsp paprika, and 2 tbsp hot sauce *(optional)*. Mix and add the chicken.
2. To prep the chicken, flatten it out to even it out so it cooks evenly and slice in half.
3. Mix two eggs in a bowl.
4. Grab another bowl and add: 1/4cup flour, 1/4cup cornstarch, 1tsp of baking powder, 1-2tsp of garlic powder, paprika, black pepper, salt, cayenne(if u want it spicy),
5. Honestly if you’re lazy like me you can skip marinating it, it just wont taste as good so up to you.
6. Preheat your air fryer to 400 degrees and bread the chicken into the egg then into the flour.
7. Using cooking spray, spray the top side of the chicken. and spray again when you flip the chicken midway through.
8. Cook at 400 for 8-10 mins, check after the 8 minute mark, its dependent on the airfryer you have.
9. While that is cooking, prep the sauce: 1 cup of greek yogurt, 3-5tbsp of chives, splash of lemon juice to taste, 1 tsp of paprika, salt to taste, (optional:1-2tbsp of hot sauce). Mix and adjust the seasonings how you like it, play around with it.
10. After the 8-10min mark, remove the chicken, flip and spray the other side with the cooking spray to cook for another 8-10 mins.
11. Assemble, sauce first, with pickles at the bottom, topped of with that perfect piece of chicken.
12. Enjoy.
