So the way the ultrasonic cleaner works is that it sends ultrasonic waves via air bubbles in the water at a very high rate. Thus disrupting certain bonds of dirt particles and etc. But this is where vacuum sealing disrupts that. Sound cannot travel with air. Vacuum sealing removes as much air as possible. With sous vide you are just heating the water until the meat meets equilibrium with the surrounding water. So the combination of heat and vibration just means you are having the meat violently rubbed on its surface while hot.

How well did the sous vide hold up to the ultrasound? All of that vibration for 2 hours must have put some extra wear and tear on it....

A little misleading, the steak that was shown being super broken was a steak being sous vide in pineapple. The steak in the ultrasonic looked identical to the control from the full video (not on the Guga channel)
