The Mona Lisa one is likely due to what people are told about the painting. I think I was told that she wouldn't smile because she didn't want him to finish the picture for a reason I can't remember. Her mouth was the last thing to be painted. He eventually convinced her to smile and finished the painting to what we have today
The painting was never not smiling, but that's the picture we have in our minds of what she probably looked like before the painting we know today because of events we were told about
