Bitter illicits a poison response from our bodies and so we have to train our body to understand that this specific bitter thing is not poisonous. we no longer have the disgust reaction towards something we train ourselves to disassociate with poison. As a result, our body focuses on the herbal or flowery notes and is what allows people to enjoy drinking black coffee and various beers. Of course, even after training ourselves to not associate something with poison, we might still just not like it.

I would say it's like coffee. When you're young, you ask your mom if you could try a sip of her coffee. It's disgusting, not what you expected, bitter as fuck. Years later you start your day with it and can't go without it.

I discovered on youtube recently that aquired taste happens when you consume something with an ingredient your body sees as bad, when you eat/drink it multiple times your brain is like "oh this isn't actually bad" and will ignore the bad signs allowing you to taste the real flavor more.

The bitter flavor is a defense mechanism for those plants so animals don’t eat them so I understand why people don’t like it, that’s why fruits are sweet so that animals will want to eat them, leaving the rest of the plant alone hopefully and spreading it’s seed either way
