Suggestion: Instead of scrambling in the bowl, scramble them in the pan as they cook. That way, you'll get yellow and white egg, akin to a traditional egg salad.

I like the idea a lot! If I try it, though, I'll do it without breaking the yolks up. Once the whites and yolks are solid, then I'll break it all up. That might render an egg salad closer to how it's normally made. Cool idea to experiment with!

You lose the texture contrast between the whites and the creamy yolk/dressing that way. Egg salad actually DOES have texture. Scrambled eggs are just more or less uniform curd. You could also just blend a nicely sauced spaghetti into a gruel or caviar into a paste, but neither would come out a particularly satisfying or "more or less" just as good.

Love this! That's similar to what I do. I scramble them sometimes but If you hard fry some eggs it gives that hard-boiled yolk but not jiggly white. I love hard boiled eggs but peeling them is a pain in the ass. Also...if you're not into creamy mayo like dressings...I like fish sauce, Thai chillis, Scotch bonnets, rice vinegar, scallions, fried garlic, lime juice and zest, salt, sesame oil and ground mushroom seasoning. So good.
