I plant black eyed peas (a bean actually) from as a cover crop and grow my soil. The beans add nitrogen to the soil and tons of beneficial sugars and enzymes to keep the soil critter happy. A few weeks before garlic planting time I chop and drop the beans and cover with a few inches of compost to prepare the bed for my garlic late October. It's a good cycle.

If you like beets, they are $1 a piece in stores. Id grow beets. Broccoli is cheaper in stores, snd can bring insect pests to lay eggs and overwinter. Beets also give very nutritious green to eat. Trim off inground beets; wash well and chop cosrsely. Cook with a little. little bit of wayer. Season with a little minced garlic and butter, salt lightly and add a bit of rice vinegar. Serve with cooked rice or berter mix of rice grainsperhaps baked winter squash and baked apples. Speatmint tea rounds out a kight, healthy, and tasty meal. If you want meat, any pork goes well. Or add cornbread😅😅

You can plant Spinach. I plant here in Canada on August 10th. I get several pickings all Fall then put a bed sheet over it for the winter to protect from wind burn. It overwinters very well and gets off to a very quick start in Spring as the roots are already established..
