• 4 (3oz) skinless salmon fillets
• 3 Tbsp olive oil, plus more for grill
• Juice from 1-2 limes
• 1 tsp. chili powder (or chili lime spice)
• Salt, to taste
• 1 large mango, peeled and diced
• 1 red bell pepper, chopped
• 1/4 cup chopped fresh cilantro
• 1/2 cup chopped red onion
• 1 large avocado, peeled and diced
• 2 Tbsp fresh lime juice
• Salt and pepper, to taste
• 1.5 cups brown rice or whole grain of choice
• 3 cups coconut water
DIRECTIONS
• Place salmon filets in a baking dish. Top with olive oil, lime juice, chili powder and season with salt and pepper to taste.
• Allow to marinate in refrigerator at least 30 minutes or overnight. If baking, preheat oven to 375 degrees.
• Heat the pan over medium heat. Add 1 tablespoon of olive oil to pan. Place salmon in pan and cook about 4-5 minutes per side or until cooked through. If baking, place in oven for 10 minutes or until cooked through.
• Cook the rice according to the package directions and using the coconut water as the liquid.
• In a medium bowl toss together mango, bell pepper, cilantro, red onion, and lime juice. Season with salt and pepper to taste. Add the avocado and additional lime. Gently stir to combine.
• Serve salmon warm with coconut rice and top with mango salsa.
