Two theories:
1 Giving blood to the statue temporarily breaks the siren spell and weakens the sirens. But never for long enough for him to get away.
2 The statue is in control of the sirens and wants human blood. It uses the sirens to mind control men into an infinite loop of giving blood until they die of blood loss.

Okay, my head canon is that the sirens cannot return to the ocean without human blood. The statue is what keeps the curse on the mermaids and by paying his blood to the statue, the sailor stays alive but keeps the mermaids trapped. They then try to tempt him back and it repeats
