I would say you should definitely go to Lalibela , blue nile river fall, Tana, Danakil Depression, volcanos there are quite a few of them you can choose, rivers, caves, etc... I think if you really want to experience Ethiopia you should go outside of Addis Abeba ... I don't know how it is now, but if it is safe to do so definitely explore more...
