Every build works, dude, as long as semi-optimized and you're not spread to thin. Apparently a lot of enemies are weak to frost tho, so having a frost ash of war or something in your arsenal will be helpful.

Most DLC enemies are fire so if you use ICE then its a guarantee win

Stength build if you wanna use funny weapons.
Magic dex for a quick experience
Arcane to kill everything except mohg.
Dex strength to use specific weapons, but many are good.
Honesty, it is hard to play any of these wrong. Hell every build is viable.
Just play for the fun of it. Use a build that you like.

If u want something super fun do a strength + faith build. Something like the rusted anchor and black flame spell.

Bleed build brother, it was meta back in the day, and it's pretty cool to see how you can melt the boss's health bar in a couple of hits
