If you feel more comfortable using the saw technique that's also fine however the feeling of doing everything is one smooth motion is really nice and will get you great cuts.

Its the sawing motion of a dull knife. Many people dont even know theres a better way because they were raised by parents who kept blunt knives.

I grew up using dull or cheap serrated knives, but having a good sharp knife that can make clean pass throughs like this is huge for consistency. And it’s more fun lol.

This MATTERS when you do Banquet, or Catering Prep, when youre a Pro. It also matters when you are cooking for 8-10 people for a home party. I learned at 18-20 working at a BUSY Country Club....3 seperate Banquet Rooms, plus a Seperate Kitchen for Formal Dining.....Weekends were NUTS! I tried teaching my Mom, my Grandmother, my exWife, my current Gal.....how to pick the correct knife......they ALL use the Wrong Knife.....they fear a Chef Knife. NoOnes lost a Finger, so I guess they win their Argument for Limitation.

Butcher here adding a tip: when cutting make sure the tissue you are cutting is as stretched/stiff as possible. This is why froz3n meat is easier to cut. If you find yourself sawing through a roast and your prepping it. Consider if you can grip it better to create more tension where you cut
