I mean, I always like to remind of this: Custodes weren't made to be just soldiers like the Astartes. They were also the Emperor's companion which is why they're capable artists, scholars and philosophers as well. They weren't intended to be just super soldiers, they were intended to be truly super human. Their cold and calculating side is what mostly shows simply because we mostly see them fighting which is when they're usually very serious and straightforward.
