When you put corn in a soup that way it ends up being one of the most enjoyable elements every time.
After turkey i use the carcass to make a similar soup, chicken or fish carcass works very well also.
I can usually get fish carcass for free by asking at the sportfish cleaning station in my harbor.

this looks bomb. one of my favorite soups. I am not a fan of the chunks of corn - I take it off the cob because it's just easier to eat. We also like to put rice in the meatballs and let it cook in the broth and add extra cilantro 😊
