Panforte is a fantastic mix of dried fruit and nuts held together with sugar and honey and flavoured with cinnamon and nutmeg. It is easy on the stomach and far and away my favourite snack when out on my bike.
For 16 bars you will need:
350g almonds
250g candied lemon and orange peel
150g plain flour
1 tsp cinnamon
½ tsp nutmeg
150g caster sugar
150g honey
Heat oven to 200°C.
Put the almonds on a baking tray lined with greaseproof paper, and toast for 5 minutes.
Turn oven down to 160°C.
Tip the almonds into a food processor (or smash in a mortar and pestle) and grind into small pieces according to preference (I like to leave some larger pieces).
Combine the flour and spices in a large, heatproof bowl and mix with the peel and almonds – set aside.
Gently heat the sugar and honey in a pan until it reaches 115°C (or until a little dropped into cold water forms a ball when pressed between finger and thumb.
Immediately stir into the dry ingredients and mix well. Scrape into a lined baking tray and press down evenly. I use a second baking tray with greaseproof paper on the outside.
Bake for about 30 minutes until just firm, then allow to cool before turning out and slicing into bars.
Wrap in foil-backed baking parchment and store in an airtight container.
