Nerding out over sound engineering is often a way to avoid thinking about the core of the music itself. If the song, played in a simple raw form is good, the rest is just nice packaging. And if the song sucks, it doesn’t matter what pretty box you put it in.
Also, I believe that the time spent on tiny sound production should be thought of as time you aren’t spending writing and creating the next piece of music. When I hear bands talk about the years it took for a demo to get to final recording I think: how many other great things didn’t you write while you polished this? And worse, when you listen to the original almost everything good was already there.
