For me it's piano, pipe organ, recorder and... any flat surface.

While I play alot of instruments (some better, some worse) I think it's very helpful to be at least somewhat fluent on the piano for note input and sketching your ideas (or just trying stuff). But of course you can mouse-click your way through a mockup, I did this alot.

I studied guitar and taught myself keyboard. It is helpful to know how to play, but there are a lot of folks who make great music by just drawing notes in and using their ear.
