I'd like to mention that her name in Chinese version is indeed pronounced like "Jet". Her name in Chinese is "Jie-de"(婕德) so I guess it's more like "Jed". Anyway Mihoyo always has this problem with localization for names so take it with a grain of salt. Just saying that if they do a voice dub for world quest she will most likely be "Jet".

It is a surprise even for me, because all the names are written the right way. Like Candice is Кандакия (Kandakia), because it is strange to see Candice in the desert culture

I just finished the quest involving Jeht yesterday. As in, the final quest involving her. I won’t spoil anything, but I came out of it feeling emotionally drained. I really wish she makes a return later in the game, so HoYoverse can give her a happy ending.
