As a younger man I didn't care for liver but my wife made it for us one night and turns out the trick is don't overcook it, once you go too far past medium the texture gets grainy and chewy, now it's one of my favorite meals when cooked medium, some pink visible still, though we do like 2 whole onions and of course mashed potatoes.

My grandpa made sure I grew up enjoying liver and onions. He always seasoned the flour with more spices though, and he would fry up bacon first and leave the grease in the pan to fry the onions and liver in. Bacon adds such a delicious contrast to everything else in the dish; it's a necessity in my opinion.

1. Cut the liver into small cubes 2. Season with salt and pepper 3. Using a skewer, grill them over charcoal. 4. Serve with pita bread, roasted peppers, fresh onions and lime. Trust me when I say this is the best way to have beef/lamb liver. It’s actually a common way of serving liver in Iran.
