It's comforting to see that my naive, amateur idea of how to compose approximately matches the real thing (at least in your case). I've tried composing by improvising on an instrument too, but I think I prefer the pen and paper method.

What's the criteria for what you write with the red side and what you write with the blue side?

Not the way I compose. I think it better to write the entire melody, at least several bars. Then fill in the chords that might work. Then see if you need to change things. Never be in such a hurry.
