the hardest part about making a good cheesecake is pulling it out of the oven at the right time, I would try to pull it out when it's even more wobbly next time.

The Cheesecake factory actually put a basque cheesecake on their menu last year. I had never tried it before then, but as soon as I did, I had to bake one at home. Delicious!

For the record, I made a keto version of this and it was delightful.
I swapped out the sugar for artificial sweetener and the flour for almond flour. Same measurements (might've put a little extra artificial sugar in), cooking time, and everything.
Turned out amazing. I did the math and the whole thing was maybe 14 grams of carbs, which works out to 1.75 grams of carbs for a 1/8 slice.
