Waveforms for videography are almost always done using the camera's existing gamma curve - partly because RAW shooting + video is an extremely rare combination that few cameras support. For stills where RAW shooting is possible - yes, we need MUCH better RAW histogram/overexposure/general analysis support in-camera.

Waveform monitors, in conjunction with a vectorscope can be used to ensure accurate color reproduction by using known test cards and what their values should read. You can then adjust calibration on your end to force the values into compliance, ensuring accurate reproduction. You can also use them to fix color casts.

"Waveform" in this context means something different than what you're talking about. It's a visualization tool similar to a histogram, but while the histogram is a graph of the entire image, the waveform is column-by-column. It gives you a lot more information and I agree with OP that they're much more useful than histograms.

Great video - get it why you choose mirrorless systems over more dedicated cinema cameras. Still I find a rig is a great help in making the experience with mirrorless camera a lot better when using them handheld. Let me choose between a Histogram Display and a Waveform Display while editing. Having done some color grading and using a waveform display as opposed to a histogram I've really seen the benefit of this alternative display.
